gold bug

gold bugs have been right about a lot of things. they're basically maxis who just haven't crossed the digital moat. it's like a boomer who's yet to be exposed to the nuances of light roasted coffee. so alas, this is our dark roast offering. not oily enough to leave rancid residue in all of your gear, but not light enough to offend your "so strong a spoon stands up" grandfather who keeps their cash emergency fund in a hollowed out bible.

blend components

• 60% peru / cajamarca / chirinos cooperative / fully washed / caturra / certified organic
• 30% colombia / tolima / aspasar cooperative / fully washed / castillo, caturra, colombia / certified organic
• 10% guatemala / huehuetenango / codech cooperative / fully washed / bourbon, caturra, catimor, pache field blend / certified organic

roasting info

• pre-roast blend roasted to about a 15.5% moisture loss in around 12:00, dropping at 408.9 °f
• on an old school 60 kg drum roaster at the moment, but stepping into the 21st century with convection (not a loring) in the near future
• first crack around 9:10
• 23.6% development / ~2:50 development time
• agtron color reading - 55 whole bean, 68 ground (ground on ek43 at 3.5 "old dial")
• for industry folks, we cup the blend's individual components in the 84.25 - 85.75 sca range

cost transparency

• the weighted cost of this blend is around $5.10 for the green coffee, FOB. Add on another dollar or so in logistics (freight + importer fees) getting this imported from origin countries to our stateside partner warehouses
• then another $0.20 or so for the final leg to our facility (and perhaps even $0.15 in storage if the coffee isn't pulled to our headquarters in a timely fashion
• tack on another $1.50 for production - rent, gas, electricity, roasting labor, and production labor
• let's call it about $8.00 per lb
• packaging/label adds another $1.50
• part of the green cost is the organic certification, typically >$0.25/lb premium going to the farmers
• except for the ethiopian component, members of our sourcing team have been to each of these cooperatives to see the land, meet the producers, and verify the farming and agronomic practices (don't trust...)
